Summer Bites: Broccoli-Cheddar Frittata

Broccoli, carrots, aged cheddar, and a touch of Dijon mustard come together in a dish that feels indulgent but works hard for your health.

It's the kind of breakfast that keeps you full and energized all morning — perfect for seniors who want to start the day right without spending an hour in the kitchen.

Ingredients

• Frozen broccoli cuts

• Liquid egg substitute

• 2% milk

• Dijon mustard

• Seasoning salt and ground black pepper

• Aged cheddar cheese, finely shredded

• Diced green onion

• Fresh diced carrots

Instructions

1. Preheat oven to broil setting.

2. Cook broccoli and carrots in a nonstick, oven-safe skillet over medium heat until just tender.

3. In a bowl, whisk together egg substitute, milk, Dijon mustard, seasoning salt, and pepper.

4. Pour egg mixture over the vegetables in the skillet. Top with shredded cheddar and green onion.

5. Cook on the stovetop for 8–10 minutes until the edges are set.

6. Transfer to oven and broil for 2–3 minutes until the top is golden and set.

7. Slice into wedges and serve warm.
