One pan. One oven. One seriously satisfying dinner. Some nights, you just want a meal that's easy, hearty, and honestly delicious. Our latest addition to our summer recipe series is sheet pan sausage and veggie bake. It's on the table in 40 minutes with almost no effort at all.

This is the kind of recipe that was made for summer. Fresh butternut squash, flame-roasted peppers and onions, and savory smoked sausage — all seasoned with garlic and Italian herbs, roasted together on a single sheet pan until everything is golden, tender, and just a little bit caramelized at the edges. And the best part? It reheats beautifully. Make it once and enjoy it twice.

At 342 calories per serving, this meal is satisfying without being heavy. It's built around whole, recognizable ingredients — nothing complicated, nothing processed, just good food that tastes like it took more effort than it did.

Butternut squash is the nutritional star here. Rich in Vitamin A and potassium, it supports immune health and heart function — two things that matter more as we age. And if you want to lighten things up even further, swapping turkey sausage for smoked sausage reduces sodium and fat without changing the flavor you love.

A Few Tips Before You Start

Cut your squash uniformly. Pieces that are roughly the same size will cook evenly. Aim for about 3/4-inch cubes.

Don't crowd the pan. Everything needs a little breathing room to roast properly — if pieces are too close together, they'll steam instead of crisp. Use a large baking sheet or split between two pans if needed.

Season generously. A light hand with the seasoning leaves things flat. Don't be shy with the garlic and Italian herbs — that's where all the flavor comes from.

Serves 2 | 342 calories per serving | 40 minutes total

Ingredients

• Smoked sausage, sliced into rounds

• Flame roasted peppers and onions

• Fresh butternut squash, cubed

• Garlic powder

• Italian seasoning

• Black pepper

• Cooking spray

Instructions

1. Preheat oven to 425°F.

2. Arrange sausage slices, peppers and onions, and butternut squash in a single layer on a baking sheet.

3. Spray with cooking spray and season evenly with garlic powder, Italian seasoning, and black pepper.

4. Bake for approximately 35 minutes, until vegetables are tender and sausage is slightly crisped.

5. Serve immediately — or store in the refrigerator for up to 3 days.
